Sunfish Sails

Can someone tell me what makes new sails so crisp? Is it some kind of sealer? If, It is a sealer could it be used to restore an old sail?

The sail is actually impregnated with a resin. There are companies that will recondition a sail. Here's an example:

It's not cheap though.
